摘要(中文): 本研究透過文獻分析及焦點團體法,以分析高中職餐旅教育師資供需與素質的問題,並提出具體建議供主政單位參考。主要結果如下:在高中職餐旅群師資供需的問題上,由於近年來餐旅觀光榮景乍現,高中職餐旅群學生數及班級數激增,專業教師需求擴大,過去所累積的儲備教師多數充用後,仍不敷師資需求;而現有師資培育供應源,每年產出量亦不足應用,致許多私立學校無法補充師資,呈現供不應求的現象,教學品質堪慮。而高中職餐旅群師資素質的發展上,政府制定了許多政策及法令,希望從師資供需的平衡、提高高中職學歷到碩士以上、及鼓勵在職進修上著手,塑造優質的教師,實施效果尚未彰顯;尤其當前高中職餐旅群師資呈供不應求狀態,師資素質難以掌控;餐旅群教師學歷在職業類群中排名較後;且餐旅群在職進修雖提供教師多元進修,惟參與面仍有成長空間。最後根據研究結果提具體建議供相關單位參考。
摘要(英文): This study adopted documentary analysis and focus group to address the issues and problems of supply and demand of qualified teachers of hospitality and tourism programs at secondary level. The major findings of this study include the fact that there is an urgent demand of qualified teachers of hospitality and tourism programs due to the expeditious development of such programs in Taiwan. The existing teacher training programs produce far insufficient numbers of qualified teachers for private high schools; therefore, a concern about the quality of education has been discussed in the recent years. According to a governmental report, the qualification of teachers of H & T program at secondary level is in the lowest ranks. In order to alleviate this critical issue, the government decided to take action through legislation on the qualification of certified teachers. Moreover, current teachers are encouraged to go back to university to receive in-service trainings However, effects of such initiatives are limited due to low enrollment. The results of the study will provide the related departments with information how to increase effectiveness of the training.
